What to fix for diner can be a dilemma, particularly when the cook's time and energy are challenged. That's when having a backup plan, such as this pasta recipe, can be a lifesaver. Hence this month's recipe is accurately titled Mary's Lifesaver Creamy Pancetta and Mushroom Pasta.
On its own, it's a lovely meatless entree with lots of flavor and textures to ensure that it's appreciated by all diners. However, when a protein, e.g.. sauteed shrimp or stir-fried pork strips, is folded into the pasta, the dish takes on an additional richness, elevating it to heights approaching nirvana.

A mixture of pasta shapes, fresh or dehydrated mushrooms,
heavy cream and Italian pancetta (seasoned salt-cured,
unsmoked pork belly) are the basis for a satisfying main dish.
Mary's Lifesaver Creamy Pancetta and Mushroom Pasta
2 ounces pancetta, cut into small chunks or diced
1/2 ounce dehydrated mushrooms, rehydrated, or 8 ounces fresh mushrooms, sliced
2 cloves garlic, minced
1/4 teaspoon each of salt and and pepper
4 ounces assorted pasta, such as a mixture of penne and rotini as shown in the photo above
1/2 cup heavy cream
1/4 cup of chicken or vegetable broth, or liquid from hydrating mushrooms
1 tablespoon cider vinegar
2 green onions, chopped
Optional: Sautéed shrimp, stir-fried pork strips or other protein
- Prepare pasta according to package directions, drain and cover to keep warm.
- Cook pancetta in a 12" skillet over medium heat until crisp. Remove from skillet and drain on paper towels.
- Add mushrooms, garlic, salt and pepper to the skillet, and cook until mushrooms are browned.
- Add cream and broth/liquid to mushroom mixture. Cook until bubbly and slightly thickened.
- Stir in pancetta, pasta, and vinegar.
- If desired, add cooked shrimp, pork or other protein.
- Continue stirring and cooking until all is heated thoroughly. Serve with a sprinkling of green onions.
