The first part of May found us at a conference at the Coeur d'Alene Resort in Idaho. This conference focused on rebuilding and reinvesting in rural America. We heard nationally recognized and innovative speakers address a multitude of critical issues.
While I was attending workshops (one in particular put on by the futurist, David Zach, was absolutely outstanding! If you ever have a chance to hear one of his presentations, by all means, take advantage of it!), Steven set out to explore for morels and Montana helvellas. His initial stop at the Forest Service ranger station brought discouraging words: it's too early and it's too cold. Undaunted, Steven explored around the lake and up into the hills. His fungal reward: a handful of morels, and another handful of helvellas. Certainly no bonanza, but enough reward under the adverse circumstances, and more than enough to make a lovely morel entree upon our return to Port Orford.
Another reward in Coeur d'Alene was a Tuesday night dinner with friends from Bandon who were also attending the conference. Their choice for dinner was just across the street from the Resort, Tito Macaroni's. We were delighted the minute we stepped into the restaurant. The decor was vibrant, and included Tito's original delivery truck (or so they said!). And, even though we arrived about one-half hour before closing time, the wait staff was welcoming and attentive.
Our entrees ranged from Linguine and Clams to Spaghetti Pomodori and Artichoke and Mushroom Cannelloni. All the portions were extremely generous, from the salad to entree. My cannelloni was absolutely divine. Chicken, artichokes, spinach and mushrooms were folded together, encased in hand-rolled pasta, caressed with a rich cheese sauce and served with alfredo and pomodori sauce. Surely the most indulgent entree that I've chosen in many a month!
Our hats are off to Tito Macaroni's for providing such a very pleasant dining experience!
