My mornings start off with a brisk workout on a treadmill, made more entertaining by watching taped cooking shows such as Simply Ming. One of my favorite findings on his program is Iris Tsai's Pork, Shiitake and Parsley Shumai. It's plump with flavor, easy to prepare and brings back memories of a wonderful month spent traveling in China.
We think that this lovely dish will have you tuning into Simply Ming as well!
Our shitake block gave generous fruitings.
Iris Tsai's Pork, Shiitake and Parsley Shumai
1/2 pound naturally fed ground pork
1/4 cup chopped, rehydrated, shiitake mushrooms
2 tablespoons chopped parsley, plus more for garnish
1 teaspoon minced ginger
1 teaspoon minced garlic
1 tablespoon sesame oil
1 tablespoon Shaoxing wine
1 teaspoon vegetarian oyster sauce
Kosher salt and freshly ground black pepper to taste
1 package wonton wrappers, thin, corners cut off, whole wheat preferred
Banana leaf or parchment paper sprayed with cooking spray
- Prepare a steamer lined with banana leaf or parchment -- if using parchment, spray lightly with cooking spray.
- To make filling, combine all ingredients in a large bowl and mix well. Season with salt and pepper.
- Place the filling in about 10 wrappers, forming shumai and steaming for 10 minutes.
- To serve, garnish with chopped parsley.
